The BEST chicken marinade EVER!!

Here it is! This recipe is amazing for prepping lunches or dinner for the week ahead. 

Meal prep is only as good as the recipes and types of foods you choose, they need to have staying power in the fridge for a few days.

I always say “Cook Once, Eat Twice”, this is a great to do just that!

  • 4 pounds of chicken thighs or breasts

  • juice of 1 lime and 1 lemon

  • 1/4 cup chili powder

  • 1/4 cup of paprika

  • 1 tablespoon of the following: garlic crystals or powder, onion crystals, and oregano

  • 1 teaspoon of cumin

  • Salt and pepper to taste

Mix dry ingredients into a paste and spread the paste to coat the chicken. 

Let marinade overnight for deeper flavor.

Short on time? That’s ok!

Grill immediately. Preheat the grill to medium high heat, about 350-375 degrees. Grill for 4 minutes per side until the pieces are golden and grill marks appear. Flip the pieces once more and turn heater down to medium low hear about 300 degrees for 3-5 minutes or until chicken is cooked through and has a temp of 165 degrees. Let chicken rest for 5 minutes before serving.

You can also cook chicken in the oven on 400 degrees for 25 minutes. 

Or use the air fryer on 400 for 20 minutes.
