Overnight Oats Recipe
Fall is here and I wanted to share my most asked about recipe: Overnight Oats.
This is the BOMB! Tastes delicious, fills you up and travels well.
This is a great recipe for meal prep Sundays. There is nothing better than the feeling of a fridge filled with prepped food to fuel the week ahead. Let me know if overnight oats are a favorite of yours, or if this is a new recipe for you. I'd LOVE to hear from you.

Overnight Oats
Ingredients:
1/2 cup almond milk or regular milk
1 tsp chia seeds
½ cup rolled oats
Dash of ground cinnamon to taste
1/2 tsp vanilla extract for sweetness
¾ greek yogurt
1/2 cup of fruit, I love in season fruit like berries, mango or apple. Frozen fruit works well and helps keep the jar cold on the go.
In the fall, I’ll roast butternut squash with pumpkin pie spice as my “fruit”. It’s an easy way to sneak in some extra veggies.
Optional toppings:
ground nutmeg, ground ginger, ground clove depending on taste
1/4 cup pecans or other nuts
Instructions:
In a mason jar or container, mix together oats, chia seeds, vanilla, spices and almond milk until well combined. Add greek yogurt on top, then place the fruit on top. Place in fridge overnight.
Yes! They are eaten cold, like pudding or a parfait.
Prep a few of these for your week ahead - place in the refrigerator, give a little stir in the morning...breakfast is on! I also love bringing these to the office for a mid-morning snack.
